Lizzie By The Silos
3.8% ABV | Farmhouse Table Ale Collaboration with @LittleDogBrewingCompany This collaborative brew has been a long time in the making, and we are honored to have collaborated with the one and only Gretchen from Little Dog Brewing Company to craft a special little table beer that we are very excited to share with you all! Lizzie By The Silos, named after Gretchen’s beloved pooch, was brewed with locally grown and floor malted farmhouse pilsner and red wheat malts from @rabbit_hill_malthouse and hopped lightly in the kettle with Zuper Saazer and Hallertau Mittelfrüh. For primary fermentation, we pitched a special blend of two of our favorite saison yeasts along with some Brettanomyces anomala, which contributes lovely juicy fruit esters, moderate funk, and just a touch of acidity. Lizzie By The Silos was then bottle conditioned with Brett bruxellensis and left to condition and develop a natural carbonation in the final package. When poured into a glass, Lizzie By The Silos showcases its beautiful golden-straw color beneath its mesmerizing crown of white, aromatic foam. You can expect a wonderful, fragrant, light-bodied farmhouse ale that drinks with a depth of flavors that are complex, delicate, and approachable. We get notes of delicate bready pilsner malt, Mandarin orange wedges, bright lemon mist, earthy cracked black peppercorns, juicy fruit gum, barnyard hay, and breeze through a farmhouse herb garden.

Cerveza Negra was brewed with a base of lightly toasted Vienna malts fortified with some flaked maize, which serves to lighten the body while adding a touch of corn flavor. A sprinkling of Motueka hops were added to kettle for balance and to add a hint of bright lime flavor. With each sip, you’ll experience a crisp, clean finish that will leave you craving más! 🍻 We get notes of toasted bread, homemade corn tortilla chips, gentle malt sweetness, lime mist, hazelnut, and Mexican fiesta.

MITTELFRÜH PILS 🍻
5.3% ABV | German-Style Pils Mittelfrüh Pils is our representation of the quintessential German-style lager. We brewed this brilliant beauty with a base of premium German pilsner malt and hopped it generously in the kettle with 100% German grown Hallertau Mittelfrüh hops. After a low and slow fermentation with a classic, Bavarian, lager yeast strain, we transferred the young beer to a horizontal tank for an extended period of cold conditioning. Mittelfrüh Pils pours a brilliant, champagne-gold hue into a glass mug and froths with a healthy, long-lasting crown of delicious, wet, drinkable foam. You can expect a smooth, highly drinkable, light-bodied beer that opens with a gentle kiss of malt character that is quickly met and balanced firmly by the noblest of hops, and ending with a dry, crispy, effervescent finish. We get notes of delicate, grainy, pilsner malt sweetness, lemon balm, misty herb and flower garden, honey, spicy cedar, and German bierstube.

SOURCE OF LIGHT 💡
5.6% ABV | Dry Hopped Pilsner Source of Light was brewed with 100% premium German malts and hopped several times in the kettle with one of our favorite New Zealand hop varietals - the bright and zesty, citrus-forward Motueka. We then hopped this crushable lager again with more aromatic Motueka hops in the fermenter before transferring it to horizontal lagering tank for a long, cold-conditioning slumber. The result is a brilliantly golden, light-bodied brew with smooth bitterness, hop-dominated aromas and flavors, and a clean, dry, crisp finish that makes it hard to put down. We get notes of key lime zest, fresh herb garden, white crackers, wildflower honey, and fragrant lemongrass.

STEEL CITY LAGER 🍺
5.8% ABV | Dortmunder-Style Lager Steel City Lager is a brilliant, deep golden brew capped with a persistent head of white foam that drinks with a soft, rounded character while showcasing supreme balance and smoothness. This style of beer was very popular with the working class steel and coal miners in Dortmund, Germany after WWII, where it was the most commonly drank beer style until being supplanted by pilsner in 1970. Steel City Lager has a slightly richer malt profile than a helles lager and slightly less hop bitterness than a pilsner, with a deeper golden color and slightly stronger ABV than both. We get notes of rich malt, baked multigrain bread, orange blossom honey, grape nut cereal, nutty toffee, soft noble hop spiciness, earthy sweet herbs, and dried flowers.

JACK FROST 🌬️
6.5% ABV | Cold IPA Jack Frost is a tasty, hop-forward, Cold IPA that drinks with the crispness and finesse of a lager. What is a Cold IPA? While not currently recognized as an official beer style, we liken this modern trend in brewing to something between an India Pale Lager and a dry-hopped pilsner with slightly elevated ABV. Jack Frost was brewed with a base of pilsner malt along with a touch of flaked rice to lighten the body. For hops, we decided to feature @yakimachief 303 Trial Blend - a special hop product that blends Cryo Citra, Cryo Simcoe, Cryo Mosaic, and Phantasm (derived from thiol-rich grape skins) into a single, concentrated, hop pellet. We added the 303 Trial Blend to the mash, the whirlpool, and once more during the tail end of active fermentation. Jack Frost was fermented dry with a blend of our house lager yeast and a distinctively tropical, thiolized lager yeast strain. This special yeast strain is genetically modified to biotransform thiol precursors from malt, hops, and grape-derived products into “a new wave of passion fruit, guava, and New Zealand Sauvignon blanc fruitiness.” You can expect a light-medium bodied brew that drinks with a pleasantly smooth bitterness and a crisp, snappy finish highlighted by flavors of tropical fruit and hops. We get notes of juicy overripe red guava, tropical passion fruit, pink grapefruit, Sauvignon blanc grapes, sticky pine, stone fruits, papaya, orange blossoms, and citrus zest.

SPRING SAISON🌸
6.5% ABV | Farmhouse Ale Spring Saison is a bright and refreshing farmhouse ale brewed as a tribute to the season of rebirth. Take a deep whiff and you’re transported to a rustic farmhouse, where aromas of freshly harvested grains mingle with delicate citrus, floral, and peppery notes. Spring Saison was brewed with all locally-sourced @rabbit_hill_farmhouse pilsner and wheat malts, our filtered aquifer well water, and a blend of Amarillo, Huell Melon, and Lemondrop hops. It was then fermented nice and dry with a special house blend of saison yeasts. This effervescent farmhouse ale pours a beautiful, hazy, yellow color into a glass and is quickly capped with a large head of persistent and aromatic white foam. Spring Saison drinks with a light body, opens with a kiss of lemony hop and peppery yeast flavors, and then finishes crisp and bubbly. COLTS BOCK 🌽 🚜
7% ABV | Dunkles Bock Crafted with Locally Grown Heirloom Corn Colts Bock is one of our dearest, seasonal lagers that epitomizes what we are all about here at Source — serving farm-to-glass beer drinking experiences. Back in the Spring we visited our friend Stephen Garrett’s family farm to plow the earth and then later cultivate some local heirloom corn. Using a 100-year-old, ground driven, John Deere corn planter originally designed to be drawn by a horse, we sowed the colorful seeds into the rich soil that had been fertilized over many months prior with the spent grains from our brewing process. Later, in autumn, we revisited the small farm to reap our bountiful harvest of beautiful heirloom corn, which we then incorporated into this brew. We dehusked and cooked the multicolored corn kernels in a separate cereal mash before introducing them into the main mash, which consisted in large parts of rich, bready, and toasty Munich malts. A long boil followed by a cool lager fermentation and an extended period of cold conditioning all help to give this beer its smooth, malty, distinguishing character. Colts Bock is a brilliant, dark amber, German-style lager that packs rich and complex malt flavors into a medium-light body that drinks effortlessly and finishes clean and crisp. It opens with toasty malt flavors and hints of dark fruits which are balanced by just enough noble hop bitterness to avoid sweetness and maintain a high level of drinkability. We get notes of baking bread, browned-to-perfection toast spread with plum preserves, raisins, pie crust, subtly sweet corn, a touch of caramel, graham crackers, and herbal/ earthy/ woodsy hops.

FRUITINATOR 🇩🇪🍒
8% ABV | Doppelbock Lager with Fig & Cherry In Collaboration with @urban.artifact / @fruitbloodwine / & @les_vergers_boiron_americas Fruitnator is a one-of-a-kind doppelbock lager that gracefully blurs the line between traditional German brewing and good ol’ fashioned American ingenuity. In collaboration with a consortium of fruit experts, we mindfully incorporated a variety of complementary fruits and fruiting techniques into a beer style that is typically devoid of any adjuncts. During fermentation, Fruitinator was injected with fig purée to allow the Munich lager yeast to chew on the fruit sugars, providing this complex beer with a layer of figgy wine-like depth to support its toasty, malt-forward foundation. Post fermentation, before months of lagering and cold conditioning, Fruitinator was also blended with @les_vergers_boiron_americas red Morello cherry to achieve a delicate backnote of dark fruit and subtle acidity. Fruitinator pours a deep amber hue into a glass and glimmers with ruby red highlights as it develops a dense head of gorgeously enticing, off-white foam. It drinks with a medium-full body, rounded mouthfeel, and super smooth finish. We get notes of rich malt, fig wine, toasted pumpernickel bread, prunes, cranberry brown bread, and raisin scone smothered with dark cherry preserves.
